I think you should be able to test it by gently warming it. I test car
thermostats by immersing then in hot water with a thermometer and
monitor their opening. I presume these can be tested similarly (and
you would only need 122 deg water, which you may even get out of your
tap.

Temp sensor II (not the head temp sensor) was always air. It measures
the temp of intake air.
