[T3] Choke question

There has been a lot of posts about those choke covers
and that got me into thinking a bit.
Since I read an apocalyptic chapter about chokes in
John Muirs idiot book, I have always disconected them.
The cars has always started ok, so I thought that the
chapter was correct, but what is your opinion about
chokes? I hate the thought of a choke gradually
hooking up and me not taking notice of it. But on the
other hand: I like when old cars starts up instantly
as well, like when they don't turn over five or six
times before firing up. How reliable are the t3 chokes
really?
