Stainless may well be "known" for that, but I really don't think it is true. Stock valves are not sodium filled. I don't think the stainless ones are either. One of the guys I work with converted some exhaust valves to sodium filled years ago. Seems like an interesting project, but I'd sure be reluctant to try this.
