I've replaced almost NO broken clutch cables, but OTOH I DO know people who have been stranded with broken ones. So it sounds like hydraulics are more likely to need service, but cables are more likely to leave you stranded somewhere. After all, automotive brakes were all cable operated before they were hydraulic.
