Swapping rides with another type 3 near you would be a good thing to do. You 
MAY just be expecting too much. Remember, the fasty is heavier than the beetle. 
This is a tough thing to settle when it's all subjective like this.

A certain amount of this is expected and noirmal with the FI.

Have you measured the resistance of each of your wires/SP connectors so that 
you know that they are all good?

This is not an AT is it? If so, this may the the ONLY problem. The AT will 
always be a bit less quick.  

If MT, check that the pressure sensor hose is connected at both ends. Check the 
fuel pressure. Check your gas mileage and let us know what it is. Check the 
charging system regulating voltage.  

Check the mech advance on the dist. Is it working smoothly?

Are all of these the RIGHT BOSCH parts?

The understanding that you don't understand carbs is a crucial one. Few people 
understand them, but lots of people think they do.

Check it on the road, too. It should not sag under any conditions.
