 only 4 things will cause an aircooled vw to run hot.  
 1) total advance is way off!  i have seen brazilian dizzys allow alomst 
 60 btdc of advance!!!!!!  
 2) something blocking the cooling air from going where it needs to (aka 
 nests)
 3) you are not getting fuel and causing a run lean condition... 
 skyrocketing head temps!!! no power, gets worse when warm.
 4) no oil to cool the car... this one causes the car to stop running 
 very abruptly!

Maybe it's something simple such as a busted rear air boot. A busted boot 
will cause
an engine to overheat because the cooling air escapes out the boot. Once I 
replaced one of those boots and lowered the temperature from "so hot you 
can't touch it" to "reasonably hot."  If the temperature is "so hot you can't 
touch it" that's the first thing that I would check.
