Pretty nice roadside find!

The stock exhaust should have a bit more back pressure which will 
require you to put in leaner jets for best results. That's assuming 
that the previous owner put in richer jets to go with the aftermarket 
carbs. He may have overdone it and this would explain the gas 
mileage, which seems a bit low. You'll get the best info from others 
who have the same car (Aussy model with dual carbs), however.
