I take it you mean it stops on its own, rather than stalls when you
try to take-off?

Could be fuel-pump problems; a lazy return spring in the base, pump
valves not closing properly, so doesn't work well enough to top up
the float chamber.

Sometimes air-leaks at the throttle valve pivots weaken the mixture
at idle.  Try richening the mixture screws a fraction.  They are the
black knobs on the side; undoing richens the mixture.  Note what
you've done, in case it runs worse!
Arizona = hot + high ? (or not hot at this time of year?).   Can it
be vapour-lock?

Are the idle cut-off jet assembly connections good?  Are your
balance pipes well-connected between the two carbs?
